Damiana Infused Honey
You'll need:
Honey from your kit
Damiana Leaf (loose in your large mason jar)
Medium Saucepan
Glass bowl or Pyrex measuring cup
Instructions:
1. Fill saucepan 1/2 full of water and place on medium heat.
2. Add your honey to your Pyrex measuring cup or glass bowl and place into saucepan – this creates a double boiler effect.
3. Reduce heat to low.
4. Once honey is warm, add damiana leaf to it – IMPORTANT: do not let the honey boil, this will cause the honey to crystallize!
5. Infuse the honey and damiana for 1-6 hours, stirring occasionally. The longer you infuse it, the stronger it will be.
6. Once you've reached your desired strength, strain honey back into its jar using fine mesh strainer & allow to cool before capping.
Floral Gin Infusion
You'll need:
1 bottle (750 ml) of your favourite gin
Herbs from small mason jar inside your kit
Fine mesh strainer
Metal funnel
Instructions:
1. Remove all contents from your mason jar.
2. Using the mason jar that this kit comes in, empty the small jar of lavender and chamomile into it.
3. Add one full bottle of Gin.
4. Allow to infuse a minimum of 48 hours, agitating the jar gently every once in a while.
5. Once you’re happy with the flavour, transfer gin into its original bottle using a fine mesh strainer & funnel. Store in a cool dark place.
Use your damiana honey to sweeten your floral gin and add your favourite tonic (we are big fans of flavoured Fever Tree tonic waters for our cocktails!)
